Unlike a lot of reality shows, it is often difficult to determine who will turn out to be Bravo TV's "Top Chef." Some bet their money on the contender who wins the most challenges. Others go automatically for the bad boy. A few watch for the one that begins slowly and gradually grows in confidence and skill. I really thought that "Top Chef" might finish with another female winner this year. At least, I had my hopes pinned on that. There were several strong contenders in Radika, an Executive Chef from Chicago; Leah, a Sous Chef from New York City; Ariane, the chef and owner of a four-star New Jersey restaurant; and Jamie, an Executive Chef from San Francisco. I like many others had written off the adorably quirky Carla, a catering business owner from D.C. Try as she might in the first few episodes, the girl simply couldn't pull it all together in one place at one time. However, that goes to show how wrong initial thoughts often are. It was Carla, not any of the other women, who made it to the final three to compete against two men for the title of "Top Chef." Competitor, Stefan, a European chef certainly had the skills to pull out a win. He did just that, winning challenge win after challenge. Unfortunately, toward the end he allowed his ego to get in the way and came perilously close to not making the final three. Carla's other competitor, Hosea, an Executive Chef at a Boulder, Colorado fish house, played the game coolly. He consistently landed in the top three of certain challenges but never seemed to quite hit his stride. That all changed when it came to the final showdown. In New Orleans, the three contestants were asked to create their best three-course dinner for the judges. The judging panel was expanded to include several other well-known chefs like Rocko DiSpirito as well as some of the contenders competitors like another European import, Fabio. To help the contestants, three finalists from previous seasons were brought on board. Hosea won the challenge and was allowed to choose among the three unusual types of meat to create a last minute appetizer. He picked red fish, assigning the crab to Carla and the alligator to his main competitor, Stefan. Carla's appetizer choice was a shiso soup made with bluecrab. The judges loved everything about it, getting the plucky contender off to a good start. She continued her stride toward the win with a first dish of red snapper topped with grilled clam. It, too was a hit with the judges. Unfortunately, she dropped the ball by allowing her temporary Sous Chef to influence her main course: NY strip with a potato roll in a merlot wine sauce. While the judges loved the rich sauce, they were not at all happy with the tough meat. The final course was even worse. Again, Carla listened to her Sous Chef and tried making a last minute soufflé that ended up curdling in the oven. All that was left was an apple tart with a spoon of blue cheese and a kumquat marmalade topped by micro greens. The unsatisfactory dessert left the judges wanting more. With Carla out of the competition, the final race came down to Hosea and Stefan. The fans were definitely in Hosea's corner but the skills seemed to favor the brash European chef. Hosea led with an appetizer of blackened red fish on top of a corn cake with a topping of spiced roumelade. Stefan countered with alligator soup. Both were hits with the judges, keeping the two men neck and neck in the competition. For his first course Hosea opted for a trio of raw black bass, tuna and hamachi. Stefan went with smoked salmon along with halibut carpaccio. The judges didn't like the watery composition of Stefan's dish. He froze the fish in order to cut it micro thin. However, the result was a watered down taste. While the judges wished for more "acid" in Hosea's dish, he was still the hands down winner. For the second course, Hosea chose a scallop with foie gras, preserves of apple. Stefan went with pan seared squab and cabbage. The judges liked both dishes but many proclaimed Stefan's squab the dish to beat. For his final course, Hosea opted for pan roasted venison, wild mushrooms and blackberries rather than a finishing with a dessert. Stefan, on the other hand, chose to do a dessert and served ice cream, chocolate mousse, and a banana lollipop. While the judges liked that Stefan went for the dessert while Hosea did not, they were less than impressed with his chosen dishes. Some called the food bland. Others called it pedestrian. In the end, however, Hosea managed to convince the powers that be that he, and not Stefan, had the stuff of which top chefs are made.
